Home Made Lactose Free Eggnog

Hi Folks :
Ok it's the holidays and I wanted eggnog! The store brands were out of the question. So I made my own and it turned out great! I don't like useing raw eggs these days so this is a cooked recipe. The recipe and method are below, I hope you enjoy it. If you have any questions please ask.


You need

7 cups Lactose free milk ( whole or 2%)
9 jumbo egg yolks (beaten)
1 tsp ground nutmeg
1/2 cup sugar
1 tsp vannilla

Method


In a large sauce pan add 6 cups of lactose free milk, sugar,nutmeg and vanilla and warm over med heat. When the milk is warmed to the touch remove 1 cup and whisk it into the egg yolks.
Continue to warm the remaining milk mix, when it has reached about 115f add the egg yolk & milk mixture stiring briskley with a wisk and continue to warm slowly to 135 - 140f.
Remove from heat and pour into a wide conainer ( like large mixing bowl)stir in the last cup of "cold" lactose free milk.
let cool for about 20 minutes stiring every few minutes.

If you happen ot over cook it and you see pieces of yolk don't flip out it can be fixed! if you have a wisk and a good arm just wisk the heck out of it for a minute then add the cold milk. If not then running it though a blender a little at a time can fix it.

From here into a pitcher or what ever you have handy and stick it in the fridge for 4 to 6 hours.

We tryed it warm and it was great!!
