Wheat/Gluten allergy

Hi all,

this is intended for those of you that don't know how to live without wheat.

I can eat sourdough bread with no problem whatsoever.

I buy California (Brand name) sourdough bread and have it sliced for sandwiches, and I buy Kroger brand Sourdough rolls for dinner or whenever.

I do not know why I can eat this bread, but I cannot eat any other kind of bread or wheat or pasta etc, not even gluten free.

I must have an allergy to yeast or some other ingredient.

I love my bread....

I've lived without wheat for many years but often wonder about binding agents.

Sourdough made the traditional way adds cultures to the flour, much like adding cultures to milk to make yogurt. Perhaps the enzymes and cultures help pre-digest the gluten before you eat it to make it less irritating. Sourdough also lacks yeast, as you mentioned.

Sourdough bread does indeed contain yeast.

Perhaps this is the reason you can eat it, Karen:
The acidic conditions, along with the fact that the bacteria also produce enzymes which break down proteins, result in weaker gluten, and a denser finished product.[7]
