It is great to hear from you - you seem to be very happy and optimistic about your new diet; I am so glad for you that you have this wonderful attitude - it's half the battle won already.
I haven't checked the recipes but they sound delicious; somehow, Tessa, I have quit eating desserts/cakes. I am such a health nut you wont believe it - very boring in the culinary department I have to admit; you mentioned that you like to do something that is easy in the kitchen - well, you have competition from me!! I like it very easy too. In fact I would be very happy if the food made itself
Are you feeling better after having started the gf/cf (casein free) diet? Has it been a month yet? We are proud of you, Tessa!!

P.S. The problem with many margerines or butter substitutes is that they often contain soy or something else that some of us MIers are intolerant of. If you don't have a problem with soy or anything else in the margerine then you should be fine using it. How do you feel after eating it? Any gas, bloating, diarrhea?
