Sheila,
I do eat some nuts. But - we are all different (I don't eat oats, rice, or GF bread!), so what works for me may not be right for you. Cashews seem safest for me, and I use pistachios in cooking and as snacks, but in small amounts. I just bought pecans today - we shall see. I also use some pumpkin seeds.
I think the key is to start with small amounts, and see how they settle. This morning I had a thin-sliced apple with cashew butter for breakfast, plus a little chocolate-flavored fish oil. (See how not everything works for everyone? I loved this, but... I think it would have made my husband cry.)
Best of luck - they can be a good food source, if they work for us, but I think they are risky if we overdo it.

Oh, Sheila, I'm the worst person to guide you toward sweet treats - I once had steamed mussels for dessert
(Hey, it was a great seafood restaurant - the desserts sounded pretty ordinary!)
I don't eat store-bought cookies - I'm sure someone who has found a reliable brand will chime in, though!
And I might add... if I were craving cookies, I'd be looking for a recipe I could make a big batch of, and freeze the dough, so I could bake small batches while my dinner was cooking. I'd rather have 5 fabulous cookies a year than any number of mediocre store-bought ones... (like I said - you need a better cookie buddy!).
I will absolutely let you know if my cookie experiments work out, though it's not what you're looking for just now - here's hoping you find the perfect thing,

Sheila,
The nut butters are much easier to digest than nuts, and so they work much better for some of us, than the nuts themselves, (but some of us seem to do OK eating nuts).
I'm not a cookie eater, either, but I've heard that some of the Pamela's cookies are good.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
