ice cream question

ice cream question

I have a problem when making ice cream. The coconut milk has a strong taste that seems to overpower other flavors. I just made mango ice cream with frozen fruit. It is a lovely pale orange flavor and very nice, but the flavor of the mango doesn't really come through. Same thing with strawberries.
I always add vanilla to the ice cream, and a few drops of lemon essence and/or lime to give it a tang.
But basically all flavors taste more or less the same, hard as I try to differentiate between them.
My favorite vanilla doesn't work at all.

Any ideas?

Hi Lesley....Sometimes frozen fruits aren't sweet and very ripe. So if I have a bag of frozen fruit that lacks taste, I cook the fruit with honey (for sweetener) I reduce it till its thick, let it cool and then add it to my ice cream. See if that works for you.

It's not the sweetness. It's the flavor of the fruit, which seems to be overpowered by the coconut.
I take your point about concentrating the fruit to get more of it's flavor. I was thinking how to make an essence of the fruit. Next time I will try it.

Lesley...I forgot to mention...you need to also double the amount of frozen fruit when you cook it down. Otherwise you have no fruit to put in the ice cream maker! Robin

:grin: I knew that!

My thought: cooked fruit tastes different from raw or frozen fruit. I wonder how this will affect the flavor of the ice cream?
