History of a flare-up -- Summary and question

Three months ago, I experienced a severe flare-up of MC -- the first in some 14 years -- quite likely brought on by an excess of anti-inflammatory supplements. In an attempt to help pancreas function (after being diagnosed with chronic pancreatitis), I started taking curcumin extract + piperine, grape seed extract, and vitamin C, all in rather large doses. Wayne analyzed the effect of this regimen of additives, which I started (rather thoughtlessly) all at once at large doses, and it was easy to see how the flare-up was a direct result of this.
Naturally, I immediately stopped the supplements, went on a quick course of Budesonide, returned to my most basic diet, and after WD stopped, I tapered off the Budesonide and slowly reached what I believe is now remission.
Now the question arises: Is it possible to gradually reintroduce, in smaller doses, some of the anti-inflammatories? I'm thinking primarily of the curcumin (which needs to be taken with piperine to be absorbed). The benefits of curcumin are many, and it appears that it not only improves pancreatic function but also helps reduce uric acid, which is another problem I'm facing. So my incentive for reintroducing curcumin is very high. What would be a safe way of doing it? In what dosage and what monitoring regime? In other words, if I start with a small dosage, after how many days of not reacting can I declare that it is safe and possibly increase the dose slightly?
