Hi Dee, I sent you a pm, but my computer did something funny when I sent it, so I hope you got it. I finally had a day to myself to do some baking and I made the bread you sent. It tastes so good to me. It reminds me of the cornbread I used to make and eat and miss so much. I'm trying not to eat the whole thing for lunch. I also spent a lot of time last night browsing through Dee's kitchen. I put a binder together with all the great information all of you have given me at this website. One section is labeled "Tex's Wisdom". I'm ready to start a cookbook binder with all your great recipes and others I noticed. Did I miss one for chocolate chip cookies? It was late and maybe I need to look again. Thanks again for the wonderful bread. JoAnn

Hi JoAnn,
It's very difficult to find cookie recipes without eggs, especially chocolate chip recipes. I just posted this recipe that I found on a vegan site: http://www.perskyfarms.com/phpBB2/viewt ... highlight= and modified it to use GF flour. I make my own GF flour mix using 6 different grains/seeds, but you probably can use one of Dee's mixes, too.

Perhaps Dee has another recipe, but this is the best egg-free one I've found so far. The cookie tastes similar to Bob's Red Mill chocolate chip cookie mix cookie made with an egg substitute.

Just a quick thought here and one that worked well for me through all the vegan years when I never ate egg. Energie makes an egg substitute that is tapioca flour and you just add water to equal and egg. I have also used applesauce in chocolate chip cookies instead of egg.

I'll be adding a great bread recipe in my cookbook that will be so much cheaper to make than the GF ones that the HFS's carry. Ridiculous to have to pay $9-10 for bread IM0!!!!!

Plus, the best use of the HFS bread is for a door stop. :lol:

If you like the taste of good ole cardboard and have a door that won't stay open, the store bought breads, are the way to go. :lol: :lol:

Even worse, the one without yeast and eggs is not only hard, but tastes like styrofoam.

Thanks all of you for the great advice. I'll have to find the egg replacer you mentioned Maggie. I'm going to try to make the cc cookies tomorrow, Gloria. I think that's what I miss most. I'm looking so forward to your cookbook, Dee. I don't know what I'd do without all of you to help navigate through all this. You're right about paying so much for those gf loaves with such poor quality. I just get so desperate sometimes that even those taste good. JoAnn
